No way to stop recording in progress?
I'm a complete noob, but I could not find a way to cancel a recording in progress.
Surely there must be a way...

If you set the program that is recording as a 'manual' recording, then you can click on 'recording options' and click on 'cancel this recording'.

If it's a Favorite (which I assume it is, if you are not able to stop it), you can install the "Multi-Function Stop" plug-in - which I recommend doing anyway, it's nearly painless and doesn't really affect anything else. When you press Stop, it gives you multiple stop options. One will be "stop recording and keep partial file". You can choose this and then delete the partial file if you don't want it.
Another option, I believe, is to mark it "watched". Of course, if you want SageTV to record the next airing of that same episode (and are just stopping the current one because, say, you need to free up a tuner), then you have to remember to go back and unmark it later, before the next airing. Of course, I could be wrong - I have used the plug-in for so long that I don't remember what the default programming offers. http://forums.sagetv.com/forums/showthread.php?t=11603

Yes, and after you cancel it, the partial recording is still there. Either on the main recordings list or under Partial Recordings. Unless you need the tuner or disk space for something else, just let it finish and then delete the file.
