I have not installed Java 8 for this reason

I use Plex/Sage, and I have two types of tuners, but I have them both go to the same directory so this is a non-issue for me. I rip BR/DVD to different directories based on genre, also works fine.

not that this really helps you with your problem, but if you're willing to change your directory approach it should all work okay.

Not necessarily, just the last version if you stay with the current version of the jetty plugin... nothing preventing someone from updating the plugin in the future to get around whatever is killing it on java 8.
