I would upgrade to Vail but it is a 64 bit OS which means that you can't use firewire for channel change since 64 bit firewire drivers don't exist for cable boxes.
I believe that you can use "spanned volumes" in Windows to allow several physical hard drives to be mapped to one drive letter on your server. For example you could buy 2x2TB hard drives and create one spanned volume called D on your Server that would be 4 TB in size. You could then share that out to all client PCs in a very similar way to what you have with WHS.

I totally forgot about spanned volumes... that equals that difference out.
