Yes, you should be able to just add those folders to your "video folders" in SageTV setup and it will play ripped DVDs with the menus if you haven't stripped them out.

There is no plugin required. The USB-UIRT is supported in SageTV by default - you just have to tell it you want to use the USB-UIRT to do channel changes for that specific tuner. Should find info on that in the
SageTV user manual. Start with page 254.
