I would really prefer to do both over HDMI, but I've had to go back to HDMI video and SPDIF audio until they get it resolved (which is why I voted HDMI/SPDIF).
I do 1080i right now and its fine. Have to set the audio option in the Extender to "spdif" even though sound is going over HDMI. I would hook it directly to my TV, but then I lose all OSD of my AVR, so for now I prefer 1080i with OSD instead of 1080p and no OSD.

Component for video, and Spdif for Audio pumped through my Outlaw 950 Pre/Pro and Outlaw 7100 Amp (7x100w)

My HDTV, 34" Panasonic tube HDTV (HEAVY!), only has 480 and 1080i (no p). I'm sending 1080i video to the HDTV and it works great!
Now get some more HD Extenders in the store so I can buy one for my TV in the bedroom (32" LCD HDTV, at 720p)!!! It's a real pain using my MVP in there! I have to be sure the server (P4 2.8ghz) isn't marking commercials or it won't transcode HD shows to view through the MVP until it's done marking commercials.

LOL, I bet you have one of those 6ft black floor lamps still. I also have a old amp from '92, but it does have Dolby Surround.

My STX is hooked using HDMI video and audio into my TV running at 1080i.

I have a 30" Toshiba CRT (tube) HDTV that weighs in at 115 lbs. It was my biggest mistake ever (It was either the 30" tube or the 26" LCD, I should have gone with the LCD as I will never find someone to take this off my hands!).

Using HDMI with a Monster HDMI-to-DVI adapter to a 21" LCD monitor, and analog audio.

Will work when set to 720p. Video looks pretty good, although the Sage graphics/text is not nearly as clear and sharp when the monitor had a PC client.

I would assume that 1280 x 720 is not your monitor's native resolution and your PC client probably was using the native resolution? That would definately cause the screen to not be as sharp....
