Is there a way?
Is there a way to monitor realtime processing of the SageTVService? I am noticing spikes in CPU utilization and I would like to find out what is making the process do it. I will enable logging as well, just looking for something with a GUI, hopefully.

The log is the only monitoring tool I know of. However if you have any Java skill, it shouldn't be too hard to write a plugin to redirect log output to, say, a TCP socket that you could monitor in real time with telnet.
