Postmortem troubleshooting tips?

I upgraded my SageTV server a couple of months ago. The capture cards are the same (one Adaptec VideOH! PCI, one Hauppauge PVR150 and one ATI HDTV Wonder). The machine works like a charm -- for about a day or two. After that, either Sage freezes, and I can just restart the app to get another couple of days, or the whole machine freeze (no mouse, no caps-lock-LED toggle -- it's completely frozen)..
Tried running without starting Sage, and then it has no problems.
Reinstalled drivers and apps a few times. Started over with the whole OS a couple of times too. Still the same issue.

So I need a way to see what happened. Is there a debug-log mode I can put Sage in to see what it's trying to do when it freezes? Maybe an external postmortem-logger? I have not been able to correlate the problem with any specific activity, so I'm getting desperate.. Should I just buy a PVR500 and hope the problem is with one of my SD capture cards? They worked fine in the old machine though....?

There is a FAQ for enabling debug logging.

You should proabbyl list the details of the new system, especially the motherboard, in case anyone notices something that could conflict with any of the other hardware.
