Video starts immediately - and rec
When I start SageTV it instantly starts showing and recording something. If I close the file it goes black for 3 seconds and then starts right back up.

Use the Options command on some menu and make sure "Display Video on Menus" is not set to Always. If that isn't it, check the mmc/encoders/<some number>/never_stop_encoding properties are not set to true. If that isn't it... then wait for the next person to take a guess.
