Component capture?
Not specifically 3.0.7 beta, but I'd like to know if anyone has experience with a capture card that can take component input as its source that works with 3.0.7. Or if even such a thing exists.

I'm assuming you're talking about >480i component capture (as 480i component is rather pointless). If so, if you've got about $2000 you can do it, but it won't work in Sage. There's nothing in consumer space that captures HD component. Probably never will be either, at least not cheap.
