Glad that helped.
Last night I was experimenting a bit and changed the default recording qualities to MPEG Max. This made channel changes even quicker and smoother without the hickups associated with lesser qualities.

The one that came with the hauppauge card but with most fancy commands removed(eg watched, delete, favourite on color buttons). Modified the Main Menu and removed the Set-up from the Menu. It is only accessible from a single key on the remote I use. This way there is no way she can get in and screw up the settings.

The picture quality difference is probably because the record quality settings are different. If you want higher quality, you need a higher data rate/quality setting. I also suggest tweaking brightness and contrast settings to match live (direct to cable/ant) tv.
For live TV, truly the simplest thing to do is switch your TV input. For sports you need a high data rate, and I rarely record sports, so I can set my default data rate to a reasonable level (I have a custom rate set that is just slightly higher than "Great", it's exactly 2.35GB per hour so I can archive 2 hrs to DVD).
